cupcakes sold.

remember when i told you i was making cupcakes for a student group on campus for a fundraiser? well, i did it!

my students were excited when m and i delivered the cupcakes to the event. they said they were really cute, which was what i was going for.

four cupcakes were already sold before the start of the event, and there i was with my big goofy smile so happy that people would buy something i made.

i baked my standby cupcake recipes: red velvet cupcakes with cream cheese frosting and chocolate cupcakes with vanilla buttercream. i tried a new recipe this time: strawberry cupcakes with cream cheese frosting.

the strawberry cupcakes weren’t as strawberry-flavored as i was hoping, so i’m going to try that recipe again before i share it with you all.

the proceeds of the cupcakes went to hope2o international. i was thrilled to have this opportunity to help raise money for such a great cause. if you haven’t checked out this organization, make sure you do!

it’s valentine’s day week. i can already hear people around me dreading it.

the commercialized day of love.
another hallmark holiday.
because i’m single and everyone is in a relationship.
love sucks.

a cake sold.

i know it has been a while since i’ve updated. these last few weeks have been really busy. between navigating unpleasant student issues, going through a selection process for a new student leader group for next academic year, and balancing me time, i haven’t had too much time to do anything noteworthy in the kitchen.

but, i did want to share the cake i made for one of my colleagues for her dad’s belated birthday dinner.

it was a 9” double layer vanilla cake with vanilla buttercream. he wanted something classic and simple. so, that’s exactly what i produced. her and her dad were such a fan of it, and i’m so happy he enjoyed it.

my next project? i got asked to make cupcakes for a valentine’s day themed fundraiser for a student group on campus. i’ll have a recipe for this cake and the cupcakes coming soon. i’ll definitely be making a batch of these red velvet cupcakes with cream cheese frosting, per their request.

keep an eye out for more updates to come soon!

happy valentine’s day.

i used to hate valentine’s day.

rather than being bitter, i decided in high school that i would just give love to everyone i love. i didn’t need a significant other to like valentine’s day. i had a lot of loved ones that deserved to be given love.

here i am, years later, still doing the same thing. i may be boo’d up now, but i still try my best to give love to those around me. this year’s gift to my student staff: olive oil chocolate chip cookies. i didn’t get to take photos, so i’ll have to make them again to share with you.

if you’re still looking for a dessert to make tonight special, i’ve got four recommendations for you. i’m a big fan of everything i’ve made so far on nomsandnotes, but i thought it would be most helpful to give you my selections.
