cookies ‘n cream cake with chocolate buttercream.

a quick update to share my latest cake! a cookies and cream cake decorated with chocolate and vanilla buttercream.

if you know your oreos well, you’ll notice the piping is inspired by milk’s favorite cookie. i must say, this is some of my best piping yet.

i’m still messing around with the cookies and cream cake recipe, so here’s the chocolate buttercream recipe for now.

chocolate buttercream
from wilton

yield about 3 cups

1/2 cup shortening
1 stick unsalted butter, room temperature
1 teaspoon vanilla extract
3/4 cup cocoa powder
4 cups confectioner’s sugar

in the bowl of a stand mixer fitted with a whisk attachment, beat together shortening and butter. add in vanilla extract and cocoa powder until incorporated. a cup at a time, add the confectioner’s sugar. once all the confectioner’s sugar has been mixed in, add milk a tablespoon at a time until buttercream is fluffy. use right away to frost cake or cupcakes. yum!


cookies ‘n cream peppermint bark

it isn’t december without peppermint.

m loves peppermint bark. her favorite is williams-sonoma’s peppermint bark. she buys her annual box that doesn’t last her long enough. when she told me that was her favorite kind, i knew i had to make a homemade bark that would top that. i can’t help it–i want everyone to love homemade better!

when i saw this cookies ‘n cream version, i had to give it a go. i knew this would be the one to convert m into a homemadepeppermintbarkloving person.
