KITCHEN NOTES: twenty three (cranberry and chocolate chip blondies)

this is the twenty third installment of kitchen notes. post-it wisdom from my kitchen. a way to remind myself of the important things.

i was on call for work this past weekend.
you always need a back up plan.

whenever i am on-call for work for the weekend, i bake something to bring to the students. this time i wanted something kind of healthy but still delicious. my nod to kind of healthy was the dried cranberries. i’m not sure if it completely fits the bill, but we’ll just pretend.

students enjoyed it and said it was one of their favorite things i baked so far. that’s a win to record in the books.

cranberry and chocolate chip blondies
printable recipe – adapted from smitten kitchen

yield one 8×8 baking dish

ingredients
1/2 cup dried cranberries
1/2 cup dark chocolate chips (or more–no one is looking.)
1 stick unsalted butter, melted
1 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
pinch of salt
1 cup all-purpose flour

preheat oven to 350 and grease an 8×8 baking pan. combine melted butter and brown sugar until sugar is dissolved. add egg, vanilla extract, almond extract, and salt. mix in flour. stir in dried cranberries and dark chocolate chips. pour batter into pan. bake for 20 minutes.  cool, cut into squares, and eateateat.

so is a little nervousness.

today was our department’s group process day for our student leader position. before diving into activities, i asked if anyone was excited, nervous, and both. a little worry is necessary. it keeps you in check. it gets you from blowing up your ego too much. it humanizes you.

i always get a little worried during days like this, and i’m not even a candidate. i’m the one who is coordinating the entire affair. lots of pressure on your shoulders to ensure everything goes smoothly and everyone is having a good time. do you ever feel like it’s more nerve-wracking to be the one on the other side of the table than it is to be the candidate going through a process?

KITCHEN NOTES: twenty one (israeli couscous with mixed greens, dried cranberries, and goat cheese)

this is the twenty first installment of kitchen notes. post-it wisdom from my kitchen. a way to remind myself of the important things.

remember how i told you that my student staff wanted to do a secret snowflake (secret santa) type exchange for valentine’s day? well, they totally forgot about it, had mixed feelings about it when i brought it up again, and couldn’t decide whether or not to do it.

the people who were hesitant just don’t like valentine’s day at all. too commercialized, too couples-oriented, they said. they also mentioned it was too close to our secret snowflake exchange that it didn’t feel special.

KITCHEN NOTES: twenty (thai red curry mac and cheese)

this is the twentieth installment of kitchen notes. post-it wisdom from my kitchen. a way to remind myself of the important things.

spent a couple hours after work in my office today solving mensa riddles and drinking hot cocoa and tea with my students. i added a “tea and hot cocoa” area in my office. basically just a hot water plug in thing to heat water, mugs, tea, and hot cocoa. it’s been a hit so far. should have done this a long time ago. reminder: do this in the future.

so, i’ve done these mensa riddles before, but it’s fun when you do it with different groups of people. they would give answers that seemed right and could be the answer, but the answer cards were different.

they reminded me that there’s always another option, another answer.
