funfetti cookies.

since i’ve been running, the baking has (significantly) decreased. i think i’m in denial that the decrease is significant, hence the parenthesis. others have noticed the significant decrease. yup, i’m calling you all out, rei boston.

i heard from a little birdy that some of the staff at rei boston were asking when i would bring in baked goods again, because i hadn’t brought any in for a while. (read: at least a month.)

so, i decided to bring some baked goods in when i went shopping for my new heart rate monitor.

i tried my hand at funfetti cookies. when i told a friend i was making them, he seemed a bit skeptical. in case they didn’t turn out, i made a loaf of banana bread, nixed the ground cinnamon, and threw in some cinnamon chips into the batter to make ’em a little special.

but, here are the funfetti cookies in all their glory via instagram photos. i delivered both the loaf of banana bread and the cookies. needless to say, they were both a hit.

yield 2 dozen

ingredients
1 stick unsalted butter, room temperature
3/4 cup sugar
1 egg, room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cream of tartar
1/2 cup sprinkles

in the bowl of a stand mixer fitted with paddle attachment, beat the butter on medium speed until smooth. pour in the sugar until fluffy and light. add in egg and vanilla.

whisk the flour, salt, baking powder, baking soda, and cream of tartar in a medium bowl. combine the dry ingredients to the wet ingredients in 3 parts. fold in 1/2 cup sprinkles.

scoop the dough into balls. the dough balls should be taller, rather than wide. chill the dough balls on the cookie sheet for at least 2 hours in the refrigerator. you definitely need to do this to prevent spreading in the oven.

preheat oven to 350. prepare two baking sheets with parchment paper. bake chilled cookie dough for 8 minutes. remove from oven. the cookies will look undone, but don’t fret. leave the cookies on the cookie sheet for 3 minutes then transfer to wire rack to cool completely.
