lemon sorbet.

summertime sorbets have to be my favorite. forget the ice cream. just give me some citrusy, smooth sorbet, and i’m happy as a clam.

it’s really starting to feel like summertime here in boston. the temperature is hot, the sun is shining, and all i wanna do is go to the beach.

i made lemon sorbet to be used in a homemade version of smitty’s raspberry freeze. so, stay tuned. it is refreshingly perfect!

lemon sorbet
printable recipe – barely adapted from emeril lagasse

yield 2 cups

1 cup water
1 cup sugar
1 cup freshly squeezed lemon juice
1 tablespoon lemon zest
1 tablespoon vodka

in a small saucepan, bring water and sugar to a boil until sugar is dissolved. remove from the heat and cool completely. add in lemon juice and zest to the cool liquid. pour into the bowl of your ice cream machine and follow the manufacturer’s instructions. transfer finished sorbet into a container and freeze until needed.
