[little debbie] homemade cosmic brownies.

i had dinner with a group of summer community service fellows this past week. the summer community service fellows applied to do summer service at a variety of sites in boston. they have dinner and reflection with each other at least once a week to talk about their journey at their service site.

bringing a dessert was optional, but it’s me. so, of course, i made dessert. i needed something quick and delicious. i saw this recipe for a homemade version of little debbie cosmic brownies.

it was a done deal.

one of the students said to me,”grae, the little debbie cosmic brownies are my favorite. when i started here at ec and was feeling homesick, my best friend sent me a box of cosmic brownies. i’m really looking forward to these!”

she set the bar high.

i saw her take her first bite. i had to see the initial reaction on her face to confirm whether or not my batch of brownies were successful.

it was all over her face.

before i left, she said,”grae, these were perfect!”
success? i say most definitely.

i made another batch of these brownies for m to take to work with her. they were super popular and eaten swiftly. what a win!

[little debbie] homemade cosmic brownies
printable recipe – from averie cooks

yield 9×13 pan – about 20 squares

1 1/2 sticks unsalted butter, melted
2 large eggs
1 cup sugar
2/3 cup light brown sugar
2 tablespoons water
2 teaspoons vanilla extract
3/4 cup cocoa powder
1 teaspoon instant espresso granules
3/4 cup all-purpose flour

for ganache
1 1/2 cups semi-sweet chocolate chips
1/2 cup heavy cream
1 cup m&ms

preaheat oven to 350. prepare a 9×13 baking pan with enough parchment paper for an inch hanging over each edge of the baking pan. this will make for easy removal from the pan.
in a medium bowl, combine melted butter, eggs, both sugars, coffee, vanilla. whisk in cocoa powder and instant espresso until smooth. stir in flour until just incorporated. don’t overmix.
pour batter into prepared pan. smooth the top with a spatula. Bake for 20 minutes. a toothpick inserted in the center should comes out clean. remove from oven and cool on cooling rack.
to make the ganache, microwave chocolate chips for 1 minute to soften them. set aside.  warm the heavy cream in the microwave in a glass measuring cup for about 1 minute. add cream to the chocolate chips. let it stand for at least 5 minutes. whisk together until smooth.
spread the ganache evenly over brownies. sprinkle with m&ms. refrigerate brownies until ganache is set–about 1 hour. slice and eat it up!
