i haven’t been baking a lot recently. i’ve been on quite the “get fit” kick. after all the sugar and semi-unhealthyness i put into my body these past few months, i’ve been needing to do hella self-care to feel better in my body. so, my diet has consisted of juice and real food. lots of cut backs on the sweet treats.
i know, sad news. you don’t need to tell me twice. my sweet tooth is not happy with me.
it doesn’t mean that i’m not eating sweets at all. small doses.
and, these are the perfect small bite.
i ate a couple. packed some up as a birthday gift to c. shared the rest of them with the students who are working for my department for the summer. they ate ’em up!
peanut butter rice crispy treat truffles
from chocolate moosey
yield 6 1/2 dozen truffles
3 tablespoons unsalted butter
10 ounce bag of regular-sized marshmallows
6 cups rice crispy cereal
1 1/2 cups creamy peanut butter
16 ounces semisweet chocolate chips
melt butter in a large pot. pour in marshmallows and stir until smooth. mix in 1/2 cup peanut butter. remove from heat and add the cereal. combine well to ensure everything is evenly coated. carefully roll the cereal into 1-inch balls and place on parchment paper. cereal will still be hot. to avoid sticky hands, dampen hands with a little water. allow to cool completely.
melt chocolate and 1 cup of peanut butter over a double boiler until smooth. remove from heat.
coat each rice crispy ball completely in chocolate. place on parchment paper. decorate with sprinkles then place in refrigerator to cool until the chocolate hardens.
