it’s sunday funday, and my favorite thing about sundays is brunch.
my college friend, s, and i are pretty obsessed with brunch. aside from baking sweets, my favorite meal to cook is brunch. sweet, savory, fun, light, and lots of variety. i’m definitely adding this quiche into the brunch rotation.
i think you should too.
s and i wish brunch places were more public transit accessible in boston. for those of you familiar with boston and disagree, please share your favorite boston brunch places that are easy to get to.
all i want is a good eggs benedict. is that too much to ask?
yield 6-8 servings
1 cup smoked gouda, grated
1 box frozen spinach, thawed and removed of excess water
2 egg yolks
2 cups half and half
2 tablespoons all-purpose flour
3/4 cup scallions, chopped
1 teaspoon paprika
pinch of nutmeg
butter, to coat baking dish
salt and pepper, to taste
preheat oven to 400. coat a 9” baking dish/pie dish with butter. place on top of a large baking sheet. set aside.
in the bowl of a food processor, add spinach, eggs, egg yolks, half and half, gouda, flour, paprika, nutmeg, salt, and pepper. pulse until spinach looks evenly distributed in batter. add scallions and pulse again to mix. pour into prepared baking dish.
bake for 40 minutes or until quiche set in the center. remove from oven and cool before slicing and serving.
