it was a packed weekend with my friend, L, coming to visit from north carolina. we went to a graduation celebration that the office for multicultural programs puts on every year. we also bopped around the city, trying to get in all the things that he misses now that he’s not here.
L and i met last year when i started in my current job. we became good colleagues and really great friends. it’s always fun to have him visit, because we just laugh a lot and drink lots of coffee when we’re together.
L left last summer for new adventures in north carolina.
it was also last summer when i was introduced to oreo cookie balls. one of my student leaders, e, introduced them to me. she loves everything oreo. i even made her homemade oreos to feed her oreo obsession.
i asked her how to make the oreo cookie balls. she said they were super easy, so i had to give it a try. i asked her how i could add my own g-rae twist, and she suggested putting them on lollipop sticks and dipping them in chocolate.
e, it looks like i followed your instruction!
(chocolate dipped) oreo cookie balls
printable recipe – yield 24 cookie balls
1 package regular oreos*
1 8 oz package cream cheese, softened
1 bag dark chocolate chips
*i made two batches of oreo cookie balls and made one with regular oreos and another with the chocolate filled oreos.
in your food processor, pulse oreos until crushed into pieces. transfer to a large bowl. add cream cheese in small chunks and mix together until all is well incorporated.
with your hands, shape into balls about 1-1.5 inches in size. place on baking pan lined with parchment paper. place pan in refrigerator to chill until the oreo balls are firm.
if you want to chocolate dip and make pops out of them, melt bag of chocolate chips over a double boiler or in your microwave. put a lollipop stick into each cookie ball. coat oreo cookie balls with chocolate and place on baking pan lined with parchment paper. you can lay them on their side or stand them up, sticks up. chill in fridge for at least 1 hour or until firm. nom!
