you’ve gotta be resourceful when you don’t have much…or don’t want things just sitting in your cupboard forever.
i’ve had a canister of roasted peanuts sitting in my cabinet for a while. i needed something to do with it. i didn’t feel too inspired to bake with it or put it in some savory dish.
m suggested peanut butter. best suggestion ever, since i’ve never made homemade peanut butter.
done and done.
yield about 1.5 cup
ingredients2 cups roasted peanuts
3/4 teaspooon kosher salt
1 1/2 teaspoons honey
1 1/2 teaspoon vegetable oil
in the bowl of a food processor, add peanuts, honey, and salt. blend for one minute. scrape sides of the bowl down. with the food processor running, drizzle in vegetable oil until smooth consistency. transfer into container and keep refrigerated.
