KITCHEN NOTES: twenty three (cranberry and chocolate chip blondies)

this is the twenty third installment of kitchen notes. post-it wisdom from my kitchen. a way to remind myself of the important things.

i was on call for work this past weekend.
you always need a back up plan.

whenever i am on-call for work for the weekend, i bake something to bring to the students. this time i wanted something kind of healthy but still delicious. my nod to kind of healthy was the dried cranberries. i’m not sure if it completely fits the bill, but we’ll just pretend.

students enjoyed it and said it was one of their favorite things i baked so far. that’s a win to record in the books.

cranberry and chocolate chip blondies

yield one 8×8 baking dish

ingredients
1/2 cup dried cranberries
1/2 cup dark chocolate chips (or more–no one is looking.)
1 stick unsalted butter, melted
1 cup light brown sugar
1 egg
1 teaspoon vanilla extract
1/4 teaspoon almond extract
pinch of salt
1 cup all-purpose flour

preheat oven to 350 and grease an 8×8 baking pan. combine melted butter and brown sugar until sugar is dissolved. add egg, vanilla extract, almond extract, and salt. mix in flour. stir in dried cranberries and dark chocolate chips. pour batter into pan. bake for 20 minutes.  cool, cut into squares, and eateateat.
