wednesday was our office holiday party. we did secret snowflake again this year, which is always fun. i got a warm yellow hat and this fun gadget from my secret snowflake.
our office party is usually potluck. i’m the baker on staff, so i always say that i’ll bring dessert. someone beat me to it this year, so i had to think of something else to bring. i was perusing the interweb to find something that wouldn’t take long to make with simple, clean flavors. it took a while, but i finally found this recipe. i love spins on classics, so this was perfect to bring to the party.
it was a big hit. i think people questioned it before they tasted it. then, they ate it and enjoyed it. adding this to my repertoire.
yield enough for 10 people
8 oz ricotta cheese
8 springs of thyme
salt and pepper, to taste
preheat oven to 375. slice baguette and toast in oven for about 8-10 minutes . while baguette is toasting, zest lemon. mix ricotta and lemon zest in a small bowl. for extra lemon kick, squeeze half a lemon into ricotta mixture. season with salt and pepper. spread mixture on baguette slices. drizzle with lemon and sprinkle with thyme. serve and nom.
