green bean casserole.

there’s a first for everything.
i’ve never had or made green bean casserole.

perhaps i was feeling the holiday vibe. i was thinking about what i could make with mashed potatoes. i’ve always wanted to try green bean casserole. i found a recipe by alton brown and decided that i should just go for it.

this green bean casserole recipe was tasty. each component had their own developed flavor and came together in a creamy, smooth sauce. now that i know what it tastes like, i can’t wait to remix it. i’m thinking caramelized onions, a kick of cayenne, and some herbage in the breadcrumb.

i know what you’re thinking–where are the crispy fried onions?long story short, the onions tasted like burn after i cooked them on the stovetop. knowing i needed something crunchy, i thought panko breadcrumbs would do the job.

green been casserole
printable recipe – adapted from alton brown

yield 4-6 servings

ingredients
2 tablespoons all-purpose flour
1 pound green beens, trimmed and halved
12 oz baby bella mushrooms, sliced
1 small onion, thinly sliced
1/4 teaspoon ground nutmeg
2 cloves garlic, minced
2 tablespoons unsalted butter
1 cup veggie stock
1 cup half-and-half
salt and pepper, to taste

for the topping
2 tablespoons butter
1 cup panko breadcrumbs

preheat oven to 400.

boil water in a pot large enough for the green beans. make sure you salt your water. once the water boils, add green beans and cook for 5 minutes. drain and put in ice bath to stop the cooking process.

in an oven-safe skillet over medium high heat, melt butter. once the butter has melted, add mushrooms and cook until it starts to release its liquid. add garlic and nutmeg and cook for one minute. mix in flour and cook for one minute. add veggie stock and stir. liquid will start to thicken. lower heat and add half-and-half. once mixture is combined and thickened, remove from heat. fold in onion and green beans.

in a small pan, melt butter. when the butter has melted, add panko breadcrumbs and coat in butter. add breadcrumbs to the top of casserole.

cook casserole in oven for 15 minutes. if your breadcrumbs need a little extra brown, turn oven to broil and broil for the last 5 minutes.
