there’s something charming about coming home after a long day of work and eating cookie dough and vanilla wafers. sweet. creamy. chocolatey. sometimes, the vanilla wafer isn’t even necessary. a spoon serves just fine.
these past couple weeks have consisted of long, busy days. we’re nearing the end of the semester. tomorrow is the last day of classes for students, and they head into a week of finals before departing for winter break next week.
i’m looking forward to quieter days to be more productive. but, i know soon enough, i’ll be thinking about how ready i am to have them and their energy back in my life. such is life of a student affairs educator. we can never get enough of our students.
for cookie dough base:
1/2 cup butter
1/3 cup light brown sugar
8 oz cream cheese
1/2 cup confectioner’s sugar
1 teaspoon vanilla extract
for snickerdoodle: 1/2 tablespoon of cinnamon (i used my fancy saigon cinnamon for this.)
for peanut butter chocolate chip: 1/4 cup crunchy peanut butter, 1/4 cup dark chocolate chips
for dark chocolate chocolate chip: 1/4 cup dark cocoa powder, 1/4 cup dark chocolate chips
melt butter in saucepan. add brown sugar and stir until melted and bubbly. remove pot from the heat and add vanilla.
in the bowl of your electric mixer, beat cream cheese and confectioner’s sugar together until combined. with mixer on low, add the butter and brown sugar mixture.
divide batter evenly in three bowls/containers. add mix-ins for each type of dip. nosh. i like it with animal crackers and vanilla wafers.
