part of being an educator in student affairs is knowing that you give up your weekends sometimes–no matter what position you’re at in the institution. i did this willingly this weekend for a student leader selection group process. it was fun to be there and see students eager to go through this process to gain great leadership experience.
after a long day of teambuilders, small group activities, and a debrief, all i wanted was a day to myself. i’ve had bananas sitting out in my kitchen for about a week. they ripened up beautifully and were more than ready to use. muffin making was in my future.
one of my favorite banana bread recipes is from simply recipes. a couple tweaks, and i had the smell of honey and banana swirling around my kitchen. what could be better?
i’m ready for the week ahead.
yield 12 standard size muffins
3 ripe bananas
1/3 cup butter, melted
3/4 cup vanilla sugar
1 tbsp honey
1 teaspoon baking soda
1/8 teaspoon cinnamon
1 1/2 cups all-purpose flour
pinch of salt
preheat oven to 350. prepare muffin tin with liners. in a medium size bowl, mash bananas and melted butter together. i use a fork. add egg, honey, and sugar. mix in baking soda and cinnamon. add flour and mix until just incorporated.
divide batter evenly in muffin tin. bake for 20 minutes or until tops are golden and a toothpick comes out clean. place on cooling rack. devour.
